Pea Filling Cake - Kuo Yuan Ye's signature pie. The puff pastry is one of Kuo Yuan Ye's most distinctive pie-making techniques. It combines Chinese and Western pie-making techniques and is entirely handmade. It is made from two kinds of dough, "puff pastry" and "oil skin", which are stacked and hand-rolled to create 27 layers of crust. The crispy and oily skins in the bingsu pie crust are both made with pig fat, which is a representative of the classic Taiwanese crispy skin~
We use 4 kg of precious suet that can only be obtained from one specially selected pig in Taiwan. Lard is a layer of block fat with an oil film that grows on the pig's abdominal ribs. It has a high oil yield and the oil boiled from it has a charming aroma. The filling is made of peeled green beans and white beans, which are fried and boiled by machine and hand for 3 hours~

The crust is made with a special ratio of 1:1 between puff pastry and skin. The raw materials are made from Japanese Hokkaido wheat flour and unsalted fermented butter imported from Europe. The Haruhira and Kitasubo varieties of wheat have the unique sweetness and aroma of Hokkaido wheat, with good fracture quality and a soft chewing feel. The crust is hand-rolled by the chef into 27 layers, and combined with the filling, it has rich layers, is extremely crispy and delicate.
