The egg yolks, pickled in Yilan's red clay for 40 days, are then cooked sous-vide for 30 hours using grape seed oil and a special blend of distilled red tea gin from Taiwan’s Holy Distillery. Finally, the yolks are lightly charred to enhance their fragrance, creating a smooth and soft center with a rich egg yolk taste.

Description
The premium egg yolk pastry filling is made with Pingtung contract-farmed Wandan red beans, with black bean paste carefully crafted over six hours. The outer pastry is specially crafted with a 1:1 ratio of crispness to dough. The ingredients include Hokkaido wheat flour from Japan and unsalted fermented butter imported from Europe. The wheat varieties used are Haruka and Kitahoho, which are known for their unique sweetness and aroma. The dough has excellent flakiness and a light, tender chew. The pastry is hand-rolled by artisans into 27 layers, creating a rich, layered texture that, when combined with the filling, offers a wonderfully crisp and delicate experience.
