Description
In its early days, Kuo Yuan Ye was merely a small five-ping shop. The owner would roll up his flour sack-made pants every day and carefully wash each precious mung bean, the key ingredient for bean paste, in the small stream next to the shop. After washing, the mung beans were placed in a large pot to be roasted into filling.
To achieve a smoother texture, the bean filling had to be stirred slowly and continuously over a large stove with a spatula. The process was so labor-intensive that the craftsmen often joked that their beads of sweat were larger than the mung beans themselves.
On the eve of the Mid-Autumn Festival in 1955, Chiang Kai-shek, then residing at the Shilin Official Residence, passed by the Kuo Yuan Ye shop on his way to Beitou for a hot spring visit. Seeing the shop crowded with customers waiting to buy pastries, he wondered what had made the place so popular. He sent his chief guard to purchase some pastries, and after tasting them, he was instantly captivated. Madam Soong Mei-ling also became enamored with the flavors, requesting them as gifts for diplomatic occasions.
